Kivonat:The aim of this research is to dive deeper into the food service industry, specifically into the restaurant world. The main objective of the study was to conduct an extensive comparison of management in franchise fast-food restaurants and independent casual dining restaurants. Additionally, the sub objective was finding out success factors in the industry. The findings show that the main difference between managing franchise and independent restaurants is the influence of the ‘franchise agreement’ – a special contract between the franchisor and the franchisee. Regarding success factors of restaurants, the results concluded three top reasons: food, customer service and the marketing mix. If the restaurant offers high-quality delicious food served by well-trained friendly staff and has a strong marketing mix built up – they are guaranteed to be successful one way or another. The study recommends clear differential areas of franchise and independent restaurants and displays success factors of restaurants regardless of the type that could be used as a measuring tool for restaurants to evaluate their own performance.
