520 3 |a Every business is affected by the technologicalchanges of our century, and hospitality, which, most importantly in this case,includes the fine-dining industry, is no exception. Business models are auseful and straightforward tool for identifying and evaluating these changes.Despite being a relatively new concept, business models have been applied tovarious businesses of different scales, leading to new insights and dimensions forbusiness researchers. However, the fine dining industry, especially in themodern era, has yet to be studied extensively from an entrepreneurialperspective.This thesis aims to investigate business modelsin the context of the hospitality industry, with a specific focus on finedining restaurants. The first part of the thesis consists of a comprehensiveliterature review of academic literature related to the topic. This review willprovide an understanding of the theoretical background of fine dining restaurants,their history, and current market position. Additionally, the value propositionof hospitality-related businesses will be explored in depth, with a focus onthe factors that influence customer satisfaction and contribute to a business'smarket position.Thesecond part of this thesis involves the implementation of a quantitativeresearch study utilizing a questionnaire. The objective of this study is toinvestigate specific aspects relevant to the fine dining industry, includingthe impact of pricing on customer decision-making and the likelihood ofcustomers returning to fine dining establishments. To facilitate this analysis,the study will employ the Business Model Canvas framework, developed by (Osterwalder & Pigneur, 2010),as a comprehensive tool to examine the various components comprising thebusiness model of a modern fine dining restaurant.Throughthe utilization of the Business Model Canvas, the study will delve intoessential elements of the business model, such as customer segments, valuepropositions, channels, customer relationships, revenue streams, key resources,key activities, key partnerships, and cost structure. This comprehensiveanalysis will provide insights into how these elements interconnect andcontribute to the overall success and sustainability of fine diningestablishments.Ultimately, the goal of this study is to developa comprehensive business model for fine dining restaurants that incorporatesall significant concept dimensions. By examining the challenges andopportunities faced by fine dining restaurants, the study will provide insightsinto the factors that contribute to the success of these businesses.
