520 3 |a The demand for gastronomic tourism is constantly increasing in the 21st century, with the desire to try local cuisine and beverages becoming the primary motivation for more and more tourists, and the exploration of sustainability and local culture is also a key objective. At the same time, the younger generation is becoming increasingly more conscious of the importance of living a healthy life, maintaining a healthy diet, and nourishing their body with food that has good nutritional values. The aim of this thesis is to evaluate the state of food and culinary culture in Andalusia from the perspective of gastronomy tourism. To analyze its traditional PGI and PDO products and the motivation of tourists visiting the region, and to research how important it is for people to visit a gastronomic destination with local, sustainable, and healthy products. Moreover, the dissertations objective is to define the significance of the tapas tradition and its effects on the tourists stay in Andalusia and to explore the different opinions of the visitors about this Andalusian gastronomy phenomenon.
